Too Yummy Not to Share!

Very rarely do I post recipes {I think I have done it ONE other time} but these two recipes are a HUGE hit with my family and are requested on a weekly basis so I thought I would share them with you. They both fall in the Mexican food category and if you know me, Mexican food is my ALL TIME FAVORITE kind of food so these should be no surprise to you.

First up: Taco Spaghetti
I know it sounds weird but it is awesome and I don't know if we will ever eat regular spaghetti again! Sorry I don't have a picture of this one but trust me, you will love it!

Ingredients:

8 oz. Spaghetti, cooked
1 lb. ground beef or turkey {I use ground turkey}
1 (16 oz) Jar of your favorite salsa
1 (8 oz) Can of tomato sauce
1 pkg. Taco seasoning
1 c. Shredded Mexican blend cheese
1/2 c. Sour cream
1 Avocado, sliced {optional}

Directions:

- Cook spaghetti according to package, drain and set aside.
- In a large skillet, cook meat until browned all the way through.
- Add salsa, tomato sauce and taco seasoning to cooked meat and stir until combined.
- Bring sauce to a boil.
- Reduce heat to a simmer and add spaghetti to the sauce. Mix well.
- Serve on individual plates topped with shredded cheese, sour cream and avocado slices.
- Enjoy!

Next up: Chunky Black Bean Dip

I have seen similar dips made on various Food Network shows and was having a craving for it the other day and decided to make it on the fly. I made this recipe up myself so it is to my taste. Please adjust the seasonings to your personal preferences.

Ingredients:

1 (15 oz.) Can of black beans, drained and rinsed
1 (11 oz.) Can of Mexicorn, drained and rinsed
1-2 avocado, diced
1/3 Purple onion, diced
1 Large tomato, diced
1/4 c. Cilantro, finely chopped
1 tbls. lime juice
Salt, Pepper and Garlic salt to taste
A drizzle of Extra Virgin Olive Oil

Directions

- Combine all ingredients in a medium sized bowl and stir
- Serve at room temperature with Tortilla chips or Pita chips.
- Enjoy!
